L\u2019adresse est orchestr\u00e9e par un duo compos\u00e9 de la cheffe Am\u00e9lie Darvas et de la sommeli\u00e8re italo-br\u00e9silienne Gaby Benicio. Deux ferventes ambassadrices du bien manger qui, ensemble, ont quitt\u00e9 la capitale et leur restaurant \u00e0 succ\u00e8s Ha\u00ef-Ka\u00ef, situ\u00e9 \u00e0 deux pas du canal Saint-Martin. Ensemble donc, elles ont pos\u00e9 leurs valises dans le sud de la France, au c\u0153ur d\u2019un ancien presbyt\u00e8re du XVII\u00e8me si\u00e8cle, \u00e0 Vailhan dans l\u2019H\u00e9rault.<\/p>\n<h2>Une table de charme perch\u00e9e au c\u0153ur d&rsquo;un \u00e9crin de verdure<\/h2>\n<p>Les deux femmes ont chang\u00e9 de registre en r\u00e9interpr\u00e9tant le terroir local pour mieux se retrouver. La cheffe Am\u00e9lie Darvas explique : <em>\u00ab \u00c4ponem, veut dire \u00ab bonheur \u00bb en langue Pataxo, une tribu indienne br\u00e9silienne. Se rapprocher de l\u2019essentiel \u00e9tait notre priorit\u00e9. Cet endroit est pour nous un lieu de contemplation, d\u2019apaisement qui nous permet de revenir \u00e0 nous m\u00eame, aux produits sans interm\u00e9diaires. Se rapprocher de la v\u00e9rit\u00e9, passait aussi par cultiver notre propre terre, travailler notre pain, un endroit o\u00f9 notre travail prendrait tout son sens, \u00c4ponem est un vrai projet de vie. \u00bb<\/em><\/p>\n<h2>Du potager \u00e0 l&rsquo;assiette<\/h2>\n<p>Les deux associ\u00e9es font donc le choix de la permaculture dans leur potager adoss\u00e9 au restaurant et s\u00e9lectionnent un r\u00e9seau de producteurs locaux pour d\u00e9cliner des assiettes soign\u00e9es et graphiques, empruntes d\u2019\u00e9l\u00e9gance et de simplicit\u00e9 : <br \/>\nTomates vinaigr\u00e9es au miel de ruche, sorbet pamplemousse poivr\u00e9, pourpier d\u2019\u00e9t\u00e9, amarante et tag\u00e8te\u2009;<br \/>\n<br \/>\nDouceur de thon blanc marin\u00e9 \u00e0 cru dans une huile de p\u00e9pins de raisin \u00e0 la lavande, fum\u00e9 sous cloche et associ\u00e9 \u00e0 une betterave du jardin\u2009; Fra\u00eecheur de seiche crue juste citronn\u00e9e et linguin\u00e9e fa\u00e7on carbonara dans une cr\u00e8me au chorizo ib\u00e9rique ; jus concombre-yuzu ;<br \/>\n<br \/>\nSupr\u00eame de pigeon parfaitement cuit sur coffre, jus infus\u00e9 \u00e0 la f\u00e8ve tonka et figue blanche lact\u00e9e\u2009;<br \/>\n<br \/>\nMeringue d\u00e9licate en b\u00fbchette cendr\u00e9e au charbon v\u00e9g\u00e9tal, fourr\u00e9e d\u2019une cr\u00e8me madame au combava.<\/p>\n<p>Voici pour l\u2019exemple l\u2019all\u00e9chante carte \u00e9ph\u00e9m\u00e8re de l\u2019\u00e9t\u00e9 2018, m\u00ealant audace et tradition culinaire\u2026 R\u00e9pondant toujours au rythme des saisons, les plats servis font l\u2019objet d\u2019un menu surprise en cinq ou neuf \u00e9tapes accompagn\u00e9es de mises en bouche. Et pour encore plus d\u2019authenticit\u00e9, le pain et l\u2019huile d\u2019Olive sont faits sur place avec des ingr\u00e9dients r\u00e9colt\u00e9s localement.<\/p>\n<p><\/br><\/p>\n<p>C\u00f4t\u00e9 vins, la sommeli\u00e8re Gaby Benicio d\u00e9bouche des bouteilles du domaine d\u2019\u00c4ponem mais pas seulement, elle a \u00e9galement fait le choix de proposer des vins naturels issus des meilleurs terroirs locaux\u2026 <\/p>\n<p>R\u00e9solument locavores, les vins de Gaby Benicio et les plats d\u2019Am\u00e9lie Darvas ont donc s\u00e9duit le jury du Fooding 2019 apr\u00e8s avoir re\u00e7u, un peu plus t\u00f4t, la distinction de \u00ab Tremplin de l\u2019ann\u00e9e \u00bb par le magazine Le Chef et celle de \u00ab Grand de demain \u00bb par le guide Gault &#038; Millau.<\/p>\n<p>Plus qu\u2019un pl\u00e9biscite, c\u2019est une cons\u00e9cration !
